Meet Stacey
Stacey Hitesman, MS, RDN, brings more than 25 years of clinical experience as a Registered Dietitian Nutritionist to this program. Years at the bedside, across hospitals and a wide range of patient settings, have given her a real understanding of how serious illness reshapes the body, the appetite, and a person's relationship with food — and a practical sense of what genuinely helps when it does.
As a former university professor, she is just as at home in the research. Her gift is taking a vast and often contradictory body of nutrition science and distilling it into clear, actionable steps that fit the person in front of her, never one-size-fits-all and never more complicated than it needs to be.
In our Integrative Cancer Nutrition course, she brings that same approach to you: grounded in evidence, shaped by experience, and centered on what actually works in a real kitchen every day.
